Kuzu is a gluten free starch thickener with a smooth texture and neutral flavour that is anturally extracted from the roots of one of Japan’s most vigorous wild plants. ideal to use as a thickener in soups and stews, sweet and savoury sauces, glazes and pie fillings. To use – crush kuzu chunks and thoroughly dissolve in a small amount of cold water. Add to your cooking liquid and heat, stirring continuously until thick and translucent. A half to one tablespoon of kuzu will thicken one cup of liquid.

It is produced using a traditional method of ageing in partly buried earthware crocks. Clearspring’s Brown rice vinegar is considered to be one of the finest qualities in Japan. Refreshing and delicious, it is full-bodied and slightly sweet making it very palatable.

Each packet contains 2 handy long life, ambient stored tubs, ideal for home or use as a dessert for meals, picnics or school lunches. They can be chilled or frozen to make delicious sorbets. The organic fruit is prepared using the minimum of heat to retain its natural goodness.
