Xanthum gum can help to bind gluten free bread and baked goods. If it is not already included in your flour blend, mix 2 teaspoons of xanthum gum with 500g of plain flour for bread, ΒΌ teaspoon to 200g for cakes and a pinch per 100g for pastry.
